Madeiran Potatoes with Egg and Cheese

This recipe was inspired from Ana Patuleia Ortins cookbook. I decided to make a few tweaks to the recipe without changing the dish completely. I added more cheese and I pre-roasted the potatoes.

Thankfully the dish was very forgiving and liked my version.

I served my potato dish with a Pork Chop. It is great just on its own however, you can decide what you want with yours I think meat, chicken or fish all work perfectly.
